Carla is my Mother in law. She is originally from Romania, and she makes the best meatballs I have ever tasted. Children adore it,ad they are full with vegetables. I like to coat them with Panco -Japanese from breadcrumbs. After frying it a bit, they turn into a delicate crust from the out side and soft flavorful meatballs on the inside. Try it -you will want more
- 300 minced Beef
- 300 minced Turkey
- 2 medium eggs
- 1 large carrot
- 1 large Zucchini
- 1 large Onion finely
- 2-3 garlic minced
- 1/2 cup Parsley finely chopped
- 3 slices of Challa Bread soaked in water ,strained and finely chopped
- Salt & Pepper.
- 1 Tablespoon Sweet Paprika.
- Panco -Japanese Breadcrumbs for coating
- Chop the Onion and fry it a bit in a covered frying pan on a low heat- we need it soft and a bit caramelized .Turn the heat off and let it cool.
- Grate the Carrot and Zucchini, and squeeze it between your hands so it will stick well to the meat mixture, take all the liquids out and put in a a large ball. mince the garlic and add to the mixing ball.
- Add the Challah and Parsley and mix it all together. Beat the Eggs with the spices and add to mixture together with the minced meat. mix with your hands .Add the onion and continue mixing until well blend.
- The best meatballs come out when this heavenly mixture set for a few hours in the Fridge , covered of course 3-4 tablespoon of oil in a pan, and heat it on a medium heat.
- Fill Half a soup ball with the Panco. and with your hands shape your meatballs medium size and then coat them in the Panco, fry it from both sides, cool on a plate with paper to soak the oil.
You can eat it hot,cold,put it in tomato sauce-whatever!!!! Try it!!!!
