A very delicate broth, came out of these wonderfull Halibut fish. Halibut is a sweet meety chuncky fish. Its delicious in the oven ( halibut steak) or herb crusted on a frying pan. I chose mash potato as side dish-Perfect match!
- 6 Halibut steaks cleaned.
- 1 carrot cut into small cubes
- 2 celery sticks cut into small cubes
- 3 garlic cloves finely chopped
- 1 cup chopped parsely
- ½ leek cut lengthwise-seperate the sheets to clean with water
- ½ teaspoon white pepper
- 1 teaspoon sea salt
- ½ cup white lambrusco
- 1.5 teaspoon lemon zest
- 40 gram butter
- preheat the oven to 220°c.
- place the leek sheets on a shallow baking dish. Add the celery, carrot, garlic, parsley and lemon zest.
- Put the Halibut steak on top ,season with salt & pepper.
- Spread butter shavings evenly, pour the wine on the fish and vegetables.
- Cover with tin foil and bake for 25-30 minutes.
